Hi Lovelies. Happy Wednesday. Next week is Mardi Gras. Are you ready to celebrate? We love any reason to have friends over, even if it’s casual and just a few close friends. Today, I’m sharing and easy family friendly Mardi Gras party.
We served up vegan jambalaya, super easy kings cake, store bought cupcakes and alcohol free jello shots. I have included a vegan Jambalaya recipe that I created. You can find the kings cake recipe here and the jello shots were just lime flavored jello layered with whipped cream and sprinkles.
The kids made their own Mardi Gras masks, and had a blast playing while the moms hung out and talked. It was a huge success and so easy. Everyone loved the Jambalaya. It took me a little over an hour total for setup and to make all of the food.
- 2 cans chili beans
- 2 count vegan sausage
- 2 cups uncooked brown rice
- 1 can crushed tomatoes
- 4 cups vegetable broth
- 2 stalks celery
- 1/2 onion
- 1/2 red bell pepper
- 1/2 green bell pepper
- 1 tsp cajun seasoning
- 2 tbsp soy sauce
- 1 tsp tabasco
- salt and cayenne pepper to taste
- 1 tsp olive oil
Heat a tsp of olive oil in large pan over medium heat. Sauté onion until slightly transparent. Add celery, peppers and sausage and sauté until slightly soft.
Add all ingredients (except salt and cayenne pepper). Bring to a boil, reduce heat to low and cover the pan. Simmer until the rice is cooked and the liquid is absorbed, stirring occasionally. This should take about 30 minutes.
Add salt and cayenne pepper to taste and serve immediately.
